My mom used to make a baked creamed corn recipe when I was growing up that I loved. She only made it around the holidays and there are so many memories attached to it. While it’s not exactly the same, using my slow cooker to make this baked corn casserole is definitely similar to what she used to make.

I think this recipe is just a bit easier. In fact, you might not believe just how simple it is to make this easy corn casserole (also calledCrock Pot corn pudding)!

Whether you’re cooking at home or running around to get-togethers with your friends and family, the holidays are a very busy time of year! This baked cream corn casserole is a great option because it feeds a lot of people and doesn’t cost much either.

The key to the delicious with this recipe is Jiffy Corn Muffin mix! I have tons of memories associated with it and making corn muffins growing up, so it definitely has a place in my heart.

But it can do so much more than make some tasty corn muffins! It’s a key ingredient in Crock Pot Corn Casserole!

SLOW COOKER CORN CASSEROLE FOR FAMILY ENTERTAINING

I’m sharing this recipe now because it is one of my go-to Thanksgiving side dishes. I layer all of the ingredients in my CrockPot and let it cook while I work on other dishes.

If someone else is hosting Thanksgiving or Christmas dinner, I always volunteer for a side dish. Then I make Crock Pot Corn Casserole in my slow cooker with the travel crock. I cook it and take it with me!

The recipe below makes enough slow cooker corn casserole to feed a lot of people! It can feed 12-14 people easily depending on the serving size they enjoy.

If you want to make a smaller batch for your family, it’s easy to do! Just cut the ingredients in half and you’re good to go! It’s a great comfort food side dish on chilly evenings and pairs well with pretty much any main dish. We’ve had it with chicken, steak, and even hamburger patties!

It’s also a great dish for taking to potlucks at any time of the year!

CROCK POT CORN PUDDING RECIPE

Whether you call it corn casserole or corn pudding, there’s no denying it’s easy to make. If you’re looking to stretch your holiday budget, it’s also a recipe that feeds a lot of people without costing you too much at the grocery store!

Saving time and saving money is always a win, right?

All you need to make slow cooker corn pudding is canned corn, creamed corn, corn muffin mix, butter, sour cream, and cheese! What’s not to like about that ingredient list?

Prep time is minimal. It will take you as long as it takes you to open the cans, melt the butter, and get everything mixed together. Then the Crock Pot will do the rest of the work for you!

Once you’ve got all of your ingredients prepped, it all goes into your CrockPot. I like to use my casserole CrockPot for this recipe because then you can use it as a serving dish as well. You get a good rise on the corn casserole and it’s easy to either spoon or cut into servings. But you can use any slow cooker that you have,

If you’re using a round or oval CrockPot, I recommend going with a 6.5 quart or bigger to make sure it cooks through well. If you need to use a smaller one, you may need to increase your cook time to make sure it sets in the middle.

No matter which slow cooker you use, get it out! It’s one of the easiest ways to save time during the holidays! If youroven space is limited, it also helps with that problem too!

Crock Pot Corn Casserole

Crock Pot Corn Casserole Recipe is creamy, sweet, cheesy, and delicious! It's the best slow cooker Thanksgiving side dish! Use Jiffy corn muffin mix to make this easy corn pudding for your family and friends!

  • Drain the cans of corn and melt the butter.

  • Spray inside of CrockPot with non-stick cooking spray.

  • Layer all of the ingredients in your CrockPot.

  • Stir until combined.

  • Cover and cook 2-4 hours on high heat until golden brown on top and middle is set up.

Notes

If you want to make this recipe a bit lighter, you can substitute light sour cream or Greek yogurt. You can also use reduced fat cheese and you will still get a great result!

Can I make a smaller batch of Crock Pot Corn Casserole if I want fewer servings?

Yes, it’s easy to halve this recipe if you just want to make it as a side dish for your next family dinner. Use the following ingredient measurements:

  • 1 can of corn, drained
  • 1 can of creamed corn
  • 1 box of Jiffy Corn Muffin Mix
  • 1/4 cup of butter (1/2 stick)
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese

When I make a smaller batch, I usually start checking on my slow cooker after about 90 minutes to see how it’s cooking. My CrockPot usually still takes at least two hours but all slow cookers heat differently!
