Umm so after some SERIOUS issues with the newsletter going into literally everyone’s SPAM folder (pulling hair out and have been with customer service reps all day) I have literally gone wacko. So now, I will just post the recipe.

Yesterday, I searched HIGH and LOW for the perfect pumpkin protein pancake recipe. Uhh 4P anyone!? Looked on a million healthy living blogger sites, clean eating sites, and bodybuilding forums.Couldn’t find one so I was like, screw it, let’s have play time in the kitch. And you know what…it was a success!!!! I was so surprised. So here’s my very own recipe for a super clean, super delish pumpkin pancake!

“Blogilates Perfect Pumpkin Protein Pancake”

INGREDIENTS:

– 1 scoop vanilla protein powder

– 4 TBS canned pumpkin pureee

– 1 TBS ground flax seed

– 2 egg whites or 1/4 cup liquid egg whites

– 2 TBS almond milk, soy milk, or skim milk

– 1/2 tsp of Stevia

– pinch of baking powder

– dash cinnamon

DIRECTIONS:

1. Mix all ingredients together in a bowl.

2. Heat pan on med heat and spray with PAM.

3. Then pour batter on. Flip once small bubbles have formed on top.

NUTRITION FACTS (1 serving = entire recipe): 211 cals, 4g fat, 9g carbs, 36g protein

WAYS TO EAT:

With cottage cheese. The best! (Someone on FB suggested putting cinnamon on the cottage!)

With sugarfree strawberry jam. Meh…

With peanut butter. Good, but didn’t allow me to savor the pumpkin flavor.

For those of you on the 90 Day Challenge, you can eat these for bfast anyday! Super clean, yummy, and good for you. You can even have them for lunch and dinner. I am kind of addicted.

    I like to (I gues sauté is the word) apple slices with pumpkin pie spice or cinnamon and about a teaspoon of homey and use that as a topper, but I have a real sweet tooth. 🙂

    I’m going to try to make these like a crepe, I’m think more liquid (almond milk maybe) and then roll them with this cream cgeese/nut filing. Was wondering if you tried crepe and if so what modifications you used. Thanks!

    I also tweeked this recipe a bit but as the consistency was to mushy for me.. Pumpkin puree has alot of moisture itself so I cut back the amount of pumkin and also only added one egg white as well as less of the milk. Then i added a bit of gound oatmeal. Then I kept the griddle at a lower temp and cooked slower for a longer time. Much better!

    I just made these and they were delicious! At first they were too runny so I ended up adding 2 Tbsp of flour (replacing the 1 Tbsp of ground flaxseed because I don’t have any on hand). I paired them with maple agave nectar and I ate some of them with low calorie pumpkin butter <3 SOOOOO YUMMY! Thanks Cassey!

    I’ve made these twice and they are delicious. I am confused about the texture of the pancake though – it doesn’t seem to cook all the way through. I’ve followed the recipe exactly. Is this the correct consistency?

    Made these and not bad. Not delicious but not bad. Once I manipulate the recipe it will taste a little better. Think the 1 scoop of protein powder was too much for my taste buds. I didn’t add the stevia, don’t like the taste and added a whole egg (more protein & nutrition).

        you CAN get milled flaxseed at walmart! It’s with the flower. I bought mine at GNC for about $7.. packs lots of healthy omegas!!

    I love this recipe! I top it with PB2 and I omit the Almond Milk, and they turn out very nice! I’ll try adding the Almond Milk next time, but I just forgot to this time!

    I made these without the flax seed because I didn’t have any..After thoroughly cooking on both sides, the insides still seemed a little mushy…Is the flax seed necessary to get the consistency right ?

    Great recipe. Inspirational blog. It’s nice to try a food like this that lets me branch out from my same old egg white breakfast. Tastes pretty good! Worked best cooking them on low heat. I think I am inspired to try and make up a banana version.

    i like protein power, but i don’t always have it at home. what could i replace it with? maybe soy flour? whole wheat flour? ground oats? of course the protein content would be lower, but what do you suggest?

        All I have right now is vanilla soy protein powder. I know the other pancake recipes use whey because it makes them fluffier. Will soy do the same? I’m pretty doubtful…

    These are seriously good! I made 3 batches today for myself, DH and DD#2. I substituted powdered skim milk for the protein powder until I can buy some later this week. Think almond milk would impart a nice flavor, too, because I used skim milk. But still delicious!

    I make these with PEA protein… all I do is mix pea protein with egg whites… BAM! Typically I will mix in a little pureed pumpkin too to thicken it all up, but seriously, you don’t even need the pumpkin!

      This is true. But when I want pancakes, I make them with protein powder instead of reg flour so I can cut down my refined carb intake and up my protein intake.
